Dingle have been the trailblazers of the Irish whiskey revival and were the first of the new breed of distillers to start making whiskey. Now they have come of age and finally have some whiskey ready to drink. Thei first release was a single cask of the 2nd barrel to be filled at the distillery, which sold out rapidly. Thankfully, they have now produced an ongoing release of their cask strength single malt to enjoy. Irish Whiskey Magazine is the worlds only publication dedicated to sharing authentic insights into the exciting world of Irish whiskey. Dingle Distillery is an Irish whiskey distillery established in 2012 [4] and billing itself as an 'artisan' distillery. Hit hard by the struggle for Irish independence and American Prohibition, the industry was slow to recover, dwindling to a microcosm of an industry by 1980. At the time, Oliver Hughes and Liam LaHart, the founders of Dingle Distillery, were busy with their first venture: Porterhouse Brewing Company, a craft beer importer and chain of pubs. As they and their palates matured, their interest turned to whiskey. In 2012, they chose Dingle for its beauty, romance and temperate air and took over the defunct Fitzgerald saw mill to house the operation. The duo outfitted it with three custom pot stills built by the storied Forsyths Ltd of Scotland, while also making use of a well tapped an aquifer 240 feet below the old mill to fill traditional wooden fermentation vessels. This marked a turning point for Irish spirits as this was the first purpose-built distillery in the country in 100 years.

Single Malt Batch 1 – The first in the Single Malt series, Single Malt Batch 1 took the best Irish malted barley to make pure pot still malt whiskey which was then matured exclusively in Bourbon casks. Single Malt Batch 1 was released in 2016 and had 7,500 bottles produced with an ABV of 46.5%. It was very important to the founders that the focus be on quality over quantity. They state that they “understand and respect the concept” of distilling enormous quantities of ‘bland whiskey,’ as they put it, but that their passion for a well-crafted and flavorsome spirit can only be done in small quantities.
